The Wine Education Council plans a comprehensive, university-level class covering the fundamental principles of wine microbiology and chemistry. Texas A & M Professor Justin Scheiner  who holds a Ph.D. from Cornell University will conduct the class at locations and dates to be determined,

Dr. Scheiner will guide students toward a basic understanding of the biochemistry involved in the transformation of grapes into wine, discussing phenolic compounds such as organic acids, carbohydrates, sulfur dioxide, and alcohol;  and addressing processes such as alcoholic and malolactic fermentation, oxidation, and stabilization.
