The Wine Education Council plans a comprehensive, university-level class covering the fundamental principles of wine microbiology and chemistry. Texas A & M Professor Justin Scheiner who holds a Ph.D. from Cornell University will conduct the class at locations and dates to be determined, Dr. Scheiner will guide students toward a basic understanding of the biochemistry involved in the transformation of grapes into wine, discussing phenolic compounds such as organic acids, carbohydrates, sulfur dioxide, and alcohol;  and addressing processes such as alcoholic and malolactic fermentation, oxidation, and stabilization.

The seminars will take place in Austin, Houston, and Dallas.  The schedule will be released as soon as locations and dates are secured.
